This dish is called Shoga-yaki. "Shoga" means ginger and " Yaki" means roast ,grill or saute.Yep we don't have so many verbs for those meanings in Japanese because we love to eat raw fish !!
So if I title it in English ,I would say sauteed pork with ginger and soy.Japanese soy sauce is something special I believe.It has got depth of taste and full of flavour.
I'm quite flexible when it comes to using substitute ingredients for everyday cooking .
However,never ever substitute other country's soy sauce for Japanese soy sauce If you are cooking Japanese dish.It 'll be turning into a totally different dish.It got to be Japanese soy sauce such as Kikkoman .
Shoga-yaki is one of the best popular dishes in Japan.
